A delicious spring treat

Asparagus. It’s something that I used to hate…stringy, kind of gray and funny tasting…what was there to like? But the asparagus of my childhood, most often from a can and always over cooked, is nothing like the asparagus I love today. Following is a recipe for asparagus in its most fresh, most flavorful and most satisfying form. Prepared with barely three ingredients and ready in nearly three minutes, what’s not to love?

1 bunch asparagus (sliced into small rounds approximately 1/2 inch thick)

2 cloves garlic (sliced thin)

3 T. fresh lemon juice

  1. In a large saute pan, heat 1 T. olive oil on medium-high heat
  2. Add asparagus and sprinkle with salt and pepper. Stir frequently for two minutes or until asparagus is tender to the bite.
  3. Toss in garlic and stir. Reduce heat to medium-low and cook for an additional minute.
  4. Remove from heat and squeeze lemon juice over asparagus mixture.
