Asparagus. It’s something that I used to hate…stringy, kind of gray and funny tasting…what was there to like? But the asparagus of my childhood, most often from a can and always over cooked, is nothing like the asparagus I love today. Following is a recipe for asparagus in its most fresh, most flavorful and most satisfying form. Prepared with barely three ingredients and ready in nearly three minutes, what’s not to love?
1 bunch asparagus (sliced into small rounds approximately 1/2 inch thick)
2 cloves garlic (sliced thin)
3 T. fresh lemon juice
- In a large saute pan, heat 1 T. olive oil on medium-high heat
- Add asparagus and sprinkle with salt and pepper. Stir frequently for two minutes or until asparagus is tender to the bite.
- Toss in garlic and stir. Reduce heat to medium-low and cook for an additional minute.
- Remove from heat and squeeze lemon juice over asparagus mixture.
