I came home today exhausted, content and responsible for cooking dinner. I’ll admit, it isn’t going to be a five-star, whole-food affair – more like chicken patty sandwiches. There would have been tater tots or french fries as well if there had been any in the freezer. There weren’t, so I had to make my version of the fast fries. I’ve made them before and they are always a hit.
6 medium (or 4 large) potatoes, sliced into thin rounds
2 t. chicken bullion powder
salt and pepper
Pre-heat oven to 400 degrees F.
1. Line two baking sheets with foil and spray with oil.
2. Arrange potatoes in one layer. Spray tops and sprinkle bullion, salt and pepper evenly over the top.
3. Bake for 20 to 25 minutes or until potatoes are bubbly and golden.
These fries are crisp and chewy, salty and savory…exactly what fills a happy spot in your soul.
