Cheap and delicious, this nutritious soup is something that just makes me happy.
1/2 small onion, diced
1 carrot, diced
1 celery stick, diced
1 t. red pepper flakes
3/4 c. tomato sauce
1 1/4c. water
1 c. medium pasta shells (cooked as per box instructions)
1 T. parmesan cheese
- Saute onions until translucent. Add carrots, celery and hot pepper. Cook until tender.
- Stir in sauce and water and bring to a boil.
- Add cooked pasta to the soup. Remove from heat and spoon into a bowl. Sprinkle Parmesan.
