A forgotten comfort

I’ve been thinking lately about one of my favorite treats, one that I had forgotten about. Fried peanut butter and jelly sandwiches. Never heard of them before? Not many people have, but trust me once you’ve tried it you will look at the world differently.

There is something about the warm, buttery goodness for gooey peanut butter mixing with slippery jelly that puts a polish on the day. Here’s how to make it:

  1. Make a peanut butter and jelly sandwich
  2. Butter the outer bread of the sandwich
  3. Place in a hot frying pan and cook as you would a grilled cheese sandwich, flipping so that both sides are golden brown

For me, the only possible way to eat a fried pb&j is to have it sliced on the diagonal. There is just something about the entire experience of making and eating one that makes me feel like a kid again.
